A call for vegetable help!

Alright, friends. I know there are budding/full fledged chefs out there. I need your help.

I
hate
vegetables
right now.

I am awesome at getting fruit in my diet. Peaches, pears, blueberries, strawberries, apples. Check. Check. But vegetables are another story. Even corn - which is a sissy veggie, and my most common veggie friend - has been absent from my diet recently.

I blame it on the baby. Nothing sounds good to me right now. I need a solution.

Here are the stipulations:
-it needs to be cheap
-I'm anti-Mexican spices right now, so don't even think about it
-quick/easy would be nice, but isn't required

(I coud also use some quinoa suggestions as I recently inherited a box)

So grab those cook books and help a sister out! I'll give a grand prize blog shout-out to the person with the best suggestions! Ready. Go!

  1. seriously though, if you cut up some carrots, celery, bell peppers, etc. and leave them in an easily accessible place you are bound to snack on them. good luck!

  2. I totally understand!! for some reason the smell of broccoli would send me to lu faster than almost anything else. luckily the feeling is temporary. the easiest way for me to eat veggies was in a big salad with lots of delicious salad dressing and feta cheese.

    Ali is right too - a little butter and salt go a long way.

  3. tomato soup- recipe on vivaallgood.blogspot.com (or you could just come over and get some).

    my fav veg is sauteed asparagus in olive oil on medium high heat until kinda blackened around the edges or you could do the same things with fresh green beans. make sure to throw in some minced garlic and a little sprinkle of kosher salt for good measure.

  4. I do better with salads than cooked/raw veggies while I'm pregnant. And I do better with bitter tasting dressings, like a vinaigrette, vs. a creamy ranch. Salad with tomatoes and croutons and dressing. Keep it simple, too much going on in a salad can give you issues.
    Oh and Emily suggested salad with feta cheese, but you aren't supposed to eat feta or other soft cheeses while pregnant. Just FYI.

    Taco salad with salsa and sour cream is something I have craved with every pregnancy.
    I have also done really well with big carrots- NOT the little baby ones. For some reason they taste SO much better to me. That an celery sticks. Amelia and I down them together, and she likes ranch with hers, and again, I like the a raspberry vinaigrette/ Italian dressings.

    If you can stand them, fresh green beans steamed are delicious, and I also like the canned ones too. I think its because I really like green beans in general. Some people don't do so well with canned veggies so I would go with fresh or frozen.

    - Hate to break it to you but corn is more of a starch/grain than a vegetable.

    I guess I also do ok with pasta meals that have vegetables incorporated into them.

    Oh and I do have a recipe that I LOVE all the time, even when pregnant.

    It has beans in it too so it is a really good source of fiber and protein. We call it a summer chili since it requires no cooking. Both my kids will eat it, Amelia asks for it all the time its so good!

    Ok Bean Salad/Summer chili

    1 can black beans, drained and rinsed
    1 can kidney beans, drained and rinsed
    1 can garbanzo beans, drained and rinsed
    1-2 large tomatoes (more if you like), diced
    1-2 green peppers chopped into little bean sized pieces.
    1 cucumber pealed, and cut up
    2 stalks celery cut up
    1/4 of a red onion finely chopped (if you have an onion aversion right now, go without, it will still be good.)
    fresh lemon juice from 1-3 lemons OR some red-wine vinegar, OR some balsamic vinegar to taste(depending on how much you like, and may I suggest for your first try to go with lemon juice)
    a bit of EVOO
    and some salt and pepper if you fancy (cause I know you like it on everything. ;))

    Mix ingredients together. Chill 1-2 hours or more before eating and stir again before eating.
    When it is in season, fresh basil in the salad is sooooo goood!
    You can also put little cubes of cheddar or mozzarella cheese in it, but add it to the individual servings and not to the whole salad. The acid will make the cheese all mushy as it sits in the salad if you do.
    This with Fritos makes a delicious dinner! Healthy and delicious!

  5. I have no idea what it feels like to be pregnant, so I have no idea what you are craving...but I will give it a shot and see if any of my suggestions help. What if you grilled asparagus and smothered it in cheese sauce? That might be pleasing to your palate. OR... I have lots of good soup recipes with LOTS of veggies including Russian Borch with beets, carrots, potatoes, onion, and cabbage. If you want any recipes let me know! P.S. I had a funny dream about you, Teen, and Kristen last night--hahaha.
